Peanut Butter Bacon Pancakes

"These peanut butter-packed, bacon-topped breakfast pancakes are a decadent dish that your brunch guests will hanker for time and time again!"

Ingredients :

  • 1 1/2 cups all-purpose flour
  • 6 tablespoons white sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 1/4 cups fat-free milk
  • 2 eggs, lightly beaten
  • 1/4 cup chunky peanut butter
  • 1 teaspoon roasted peanut oil
  • 1/2 teaspoon vanilla extract
  • 1 pound crispy cooked bacon strips, broken into fourths

Instructions :

  • Combine flour, sugar, baking powder, and salt in a large bowl.
  • Mix milk, eggs, peanut butter, peanut oil, and vanilla extract together in a separate bowl. Pour into the flour mixture; stir batter until smooth.
  • Heat a nonstick griddle or skillet over medium-high heat. Drop about 1/4 cup batter onto the griddle. Sprinkle a few bacon pieces on top. Cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.

Notes :

  • Vegetable oil may be substituted for the peanut oil.
