Banana Quinoa Waffles |

Ingredients :
- 2 overripe bananas, or more to taste
- 3 cups quinoa flour
- 2 cups vanilla-flavored soy milk (such as Silk®)
- 2 cups water
- 1 teaspoon ground cinnamon (optional)

Instructions :

- Mash bananas in a large bowl with a fork. Add quinoa flour, soy milk, water, and cinnamon; mix until well blended.
- Preheat a waffle iron according to manufacturer's instructions. Grease with cooking spray.
- Drop 1/3 cup of batter onto the hot iron; close and cook until browned, 8 to 10 minutes. Repeat with remaining batter.
Notes :
- You can add nuts or other fresh or dried fruit to the batter as desired. Add honey or agave if you'd like sweeter waffles.
