• 4 carrots, cut into bite-sized pieces
• 1 leek, halved lengthwise and cut into bite-sized pieces
• 2 garlic cloves
• 1 (4 ounce) package mushrooms, quartered
• 3 tablespoons all-purpose flour
• 1 ¼ cups vegetable broth
• 1 tablespoon Dijon mustard
• 1 teaspoon ground cayenne pepper
• ½ teaspoon ground nutmeg
• salt and ground black pepper to taste
• 1 egg
• 1 tablespoon water
